Shrimp with Red Sauce
PREP:  15 min.  COOK:  10 min.  READY IN:  25 min.
Makes 4 servings
 
Ingredients:
1 (8 ounce) package angel hair pasta
1/4 cup olive oil (or coconut oil)
4 cloves garlic (optional)
1 medium onion, chopped  (substitute 4 chopped shallots for onions and garlic)
1 large green pepper, seeded and chopped
1 pound shrimp (jumbo), peeled and deveined, tails off
1 14.5 oz. can of stewed tomatoes with onion, celery and green peppers
1 14.5 oz. can diced tomatoes
1 15 0z. can tomaton sauce
1/4 teaspoon ground black pepper
1 tablespoon Italian seasoning
1/4 cup chopped fresh parsley as garnish
Hot red pepper flakes
Grated parmesan cheese
 
Directions
1.  Bring a large pot of salted water to a boil.  Stir in pasta and return pot to boil.  Cook until al dente.  Drain well.
2.  Heat olive oil in a large sauce pan over medium heat.  Stir in onions, green pepper, black pepper and Italian seasoning.  Saute until onions and peppers are soft.
3.  Stir in garlic (optional)
4. Stir in stewed tomatoes and diced tomatoes.  Cook down until water is reduced.
5. Stir in tomato sauce.  Bring to a simmer.
6   Stir in shrimp.  Simmer until shrimp is pink in color and cooked through (about 3 minutes)
7.  Plate on four plates over angel hair pasta.
Sprinkle each plate with chopped fresh parsley
Serve immediately
Serve parmesan cheese and hot red pepper flakes at table as optional garnish
